Ingredients
- 800 ml coconut milk (refrigerator cold from a can)
- 4 tablespoons maple syrup
- 300 g pumpkin puree (canned)
- 2 tablespoons erythritol
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 pinch nutmeg
- 1 pinch of salt
- Mark of 1/2 vanilla bean
- chopped pistachios for garnish
Instructions
- Do not shake the coconut milk and open carefully.
- Skim off the thicklayer of coconut cream and mix with the maple syrup.
- Scoop out 3tablespoons and set aside.
- Mix the rest of the cream with the pumpkinpuree, erythritol, cinnamon, ginger, nutmeg and salt and fill into glasses.
- Mix the reserved coconut cream with the vanilla seeds and put a dollopof it on each pumpkin pudding.
- Chill the pudding for at least 30 minutes.
- Serve sprinkled with chopped pistachios.

Chocolate mousse
Ingredients
- 150 g of quality dark pastry chocolate
- 200 ml of hot water
Instructions
- Chop the dark chocolate into small pieces.
- Heat the water until boiling.
- Pour the hot water over the chopped chocolate in a heatproof bowl
- Let sit for 5 minutes, then mix gently until the chocolate is completely melted and the mixture is smooth.
- Place the bowl in the refrigerator for at least 2 hours, until the mixture is well chilled and thick.
- Remove the bowl from the refrigerator and whisk the mixture vigorously for about 5 minutes, until it becomes frothy and fluffy.Serve immediately in glasses or coupes.
Notes
- For a smoother mousse, you can add 1 tablespoon of icing sugar to the mixture before whipping it.

Chia pudding smoothie bowl with pine nuts
Our third recipe is a delicious mix of textures and flavors. The chia pudding and pine nuts smoothie bowl is built with a creamy, fiber-rich chia pudding base. Then followed by fresh fruit and then Greek yogurt which will bring a fresh and light touch.

Chia pudding smoothie bowl with pine nuts
Ingredients
- 500 ml almond milk
- 4 heaped tbsp chia seeds
- 1 orange
- 200 g strawberries (frozen)
- 60 g fresh strawberries
- 2 tbsp pine nuts
Instructions
- For the chia pudding, mix 2 heaped tablespoons of chia seeds with 150ml of almond milk in two tall glasses and leave to soak in the fridge overnight.
- Stir well after 15 and 30 minutes so that no lumps form.
- For the strawberry smoothie, peel the orange and roughly chop it.
- Pureein a blender with the frozen strawberries and the remaining almond milkuntil thick.
- Spread on the chia pudding.
- For the topping, wash the strawberries, remove the stalks and cut in half.
- Scatter the strawberry halves over the smoothie and sprinkle with the pinenuts.
