Ingredients
- 1⁄3 cup slivered almonds
- 1⁄2 cup flaked coconut
- 10 pitted dates
- 1⁄4 cup cashews
- 1 teaspoon coconut oil
Instructions
- Blend almonds and coconut in a food processor. Add dates and pulse until combined.
- Add cashews and coconut oil, pulsing until the mixture is thick and sticks together.
- Transfer to a sheet of waxed paper. Form into a square and fold sides of waxed paper over the top.
- Refrigerate at least 30 minutes or until solid.
Notes
- You can replace the almonds and cashews with other nuts of your choice.
- For a sweeter version, add a few teaspoons of honey or agave syrup to the dough.
- You can also add spices, like cinnamon or vanilla, for a stronger flavor.
- Store the bars in an airtight container in the refrigerator for a week.

Sweet Sticky Rice with Mangoes
Ingredients
- 2 cups uncooked glutinous (sticky) white rice, rinsed
- 1 (13.5 oz.) unsweetened can coconut milk, divided
- 1⁄4 teaspoon salt
- 3⁄4 teaspoon cornstarch
- 2 ripe mangoes, peeled and cubed
- Pinch of cinnamon or cardamom (optional)
Instructions
- Cover the rice with several inches of cool water. Leave to rest for 30 minutes.
- Drain so that the rice is covered with only 1⁄4 inch of water.
- Place the rice in a microwave, cover and cook on high for about 10 minutes or until the water is absorbed and the rice is still wet. Stir and cook for another 4 minutes or until almost dry.
- Mix half of the coconut milk and the rice and stir until the rice is coated with the mixture. Cover and let the rice sit at room temperature for 10 minutes.
- Pour the remaining 1⁄2 can of coconut milk into a saucepan and whisk. salt and cornstarch until smooth. Bring the mixture to a simmer for about 2 minutes over medium heat, whisking constantly until thickened. Remove from heat and let cool.
- Pour the rice into individual bowls and garnish each with 2 tablespoons of coconut sauce and mango pieces.
Notes
- You can replace the fresh mango with thawed frozen mango.
- For more fragrant rice, add a split vanilla pod to the rice cooking water.
- You can also add chopped toasted cashews or black sesame seeds for a touch of crunch.

Ingredients
- 100g Blueberries
- 100g Melted dark chocolate
- 50g Coconut flakes
Instructions
- Prepare the blueberries. Wash them and dry them gently with absorbent paper.
- Melt the dark chocolate. You can do this in a bain-marie or in the microwave.
- Dip the blueberries in the melted chocolate. Make sure each blueberry is well coated.
- Sprinkle the blueberries with coconut flakes.
- Place the blueberries on a baking sheet lined with parchment paper.
- Place the baking sheet in the refrigerator for 15 to 20 minutes, until the chocolate is hardened.
Notes
- You can use different kinds of chocolate, such as milk chocolate.
- You can also add other ingredients, like chopped nuts or chocolate chips.
