With a little planning, you can still have a tasty dessert!

Pistachio-filled Magdalenas

You have some classic Magdalenas in your cupboard and you want to add more deliciousness. This first SOS dessert will Turn them into a delicious little sandwich filled with a creamy, dreamy pistachio filling. This is a subtle sweetness with a vibrant green heart of pistachio flavor.

Fresh raspberries add a pop of color and tartness, making each bite a satisfying blend of textures and tastes. This perfect dessert doesn’t take much time to make, just have these ingredients and you’re done.

Pistachio-filled Magdalenas

Ingredients
  

  • 16 large Magdalenas 
  • 250 grams mascarpone cheese
  • 200 grams pistachio paste
  • Optional: Powdered sugar to adjust sweetness

For the Pistachio Cream Filling:

  • Place the mascarpone in a deep bowl. Using a handheld or stand mixer fitted with the paddle attachment or a whisk, beat the mascarpone on medium speed until smooth and creamy.
  • Add the pistachio paste and continue beating until fully incorporated, scraping down the sides of the bowl as needed.
  • Taste the mixture and adjust sweetness with powdered sugar, if desired, adding it gradually and beating well after each addition.

Transfer to a piping bag:

  • Fit a piping bag with your desired decorating tip (optional, but recommended for a more elegant presentation).
  • Spoon the pistachio cream into the bag, carefully filling it from the bottom and avoiding air pockets.
  • Twist the top of the bag to close it off temporarily.

Assembling the Magdalenas:

  • Prepare the Magdalenas: If using store-bought, ensure they are completely cool and at room temperature. If homemade, allow them to cool slightly after baking.
  • Pipe the filling:Untwist the top of the piping bag and gently squeeze to pipe a dollop of pistachio cream onto the center of each Magdalena. Be mindful of the pressure to avoid creating excessive peaks or mess.
  • Create the sandwich: Carefully take another Magdalena and gently place it on top of the first one, creating a "sandwich" with the pistachio cream filling in the middle. Apply gentle but firm pressure to ensure the Magdalenas adhere without losing their shape or smushing the filling.
  • Decorate (optional): If desired, use the remaining pistachio cream to pipe additional swirls or designs on top of the assembled Magdalenas. Garnish with fresh raspberries, chopped pistachios, or other decorative elements of your choice.

It is necessary to keep in mind: The first time you prepare the recipe, it may take a little longer due to unfamiliar steps. The exact timing may vary depending on your oven temperature and individual speed in the kitchen.

Nutella soufflé

Ingredients
  

  • 170 g of Nutella
  • 2 large eggs
  • 20g butter
  • Bitter cocoa powder

Instructions
 

  • Preheat the oven to 200°C.
  • Generously butter two ramekins and sprinkle the inside with bitter cocoa powder, tapping to remove excess.
  • Separate the whites from the yolks.
  • In a bowl, mix the Nutella and egg yolks until you obtain a smooth paste.
  • Beat the egg whites until stiff.
  • Gently incorporate the egg whites into the Nutella-egg yolk mixture using a spatula, taking care not to break them.
  • Divide the mixture into the buttered and cocoa-lined ramekins. Bake for 10 to 12 minutes, until the soufflĂ©s are puffy and lightly golden.
  • Serve immediately and enjoy.
