Our first recipe is a fresh and delicious dessert with captivating flavors, very easy to make and perfect for all occasions. Elegant verrines, filled with layers of soft, fragrant and slightly sweet tapioca, topped with fresh, juicy and crunchy strawberries with their natural acidity.

Tapioca verrine with strawberries

Ingredients
  

  • 1⁄2 cup fresh strawberries, hulled and halved
  • 11⁄2 cups water
  • 1⁄4 cup quick-cooking tapioca

Instructions
 

  • In a food processor or blender, blend strawberries and water until smooth.
  • Pour into a small saucepan. Add and stir in tapioca.
  • Let stand for 10 minutes or until softened.
  • Bring to a boil over medium heat, stir frequently to prevent sticking.
  • Remove when thick. Pour into serving dishes.

Notes

Some Tips:
  • You can add sugar or honey to the pudding to sweeten it further.
  • You can also add vanilla or other spices to flavor the pudding.
  • For a creamier texture, you can add whipped cream or Greek yogurt to the pudding before serving.


Watermelon Granita with Champagne

Watermelon Granita with Champagne

Ingredients
  

  • 2 pounds watermelon, seeded and cubed
  • 1⁄2 cup white sugar
  • 1 cup of champagne
  • 4 watermelon slices

Instructions
 

  • Place cubed watermelon and sugar in a blender. Blend for 1 minute.
    Stir in the champagne.
  • Pour this mixture into a plastic container. Cover and place in the freezer.
  • Stir mixture with a fork every 30 minutes until frozen, for about 2 hours.
  • Before serving, remove the frozen granita from the freezer and stir
    well using a fork or process in the food processor until the desired
    consistency is reached.
  • Serve in tall glasses garnished with sliced watermelon.

Notes

Some Tips:
  • For a more pronounced sweetness, add the sugar gradually while blending and adjust to taste.
  • To customize the flavor, consider adding a squeeze of lime or lemon juice, a few tablespoons of Cointreau or Grand Marnier, or a splash of grenadine.
  • If you don’t have champagne, you can substitute sparkling water or a flavored club soda for a non-alcoholic version.
  • For a richer granita, add a dollop of Greek yogurt or sour cream to the blended mixture before freezing.
  • If you prefer a smoother texture, process the granita briefly in a food processor before serving.
  • Freeze leftover granita for up to a week in an airtight container. Let it thaw slightly before serving again.

Fresh Fruit Cheesecake Mousse

Ingredients
  

  • 1 cup (240ml) heavy whipping cream
  • 8 ounces (225g) cream cheese, softened
  • 3/4 cup (90g) to 1 cup (120g) powdered sugar with a Pinch of salt
  • 1/2 teaspoon vanilla extract
  • Fruits : Kiwi, Mango, Blueberry, Strawberry

Instructions
 

  • Prepare cheesecake mousse. Cool in the refrigerator while you prepare fruit.
  • Peel and chop fresh fruit as needed.
  • Start with the fruit of your choice in the bottom of each glass.
  • Add a layer of cheesecake mousse and then repeat with another layer of fruit and another layer of cheesecake mousse.
  • Assembly may be easiest if you fill a large ziplock bag with the cheesecake, cut off one corner of the bag, and squeeze the cheesecake into the dishes.
  • Continue layering cheesecake and fruit depending on the size of your glass and the variety of fruit.
